This olive oil is produced from the beginning of October in the small village of Makri in Thrace and comes from one of the oldest olive groves in the Mediterranean, with trees over 2,500 years old. The Makri variety olives, endemic to the region and bearing the same name as the village, are harvested while still green and cold-pressed between 4 and 8 hours after harvest.
